Madras curry is originally from South India. It can be used to cook vegetables or meats.
Like most of the popular curries in India, there are countless recipes for this curry, often depending on the availability of spices and other ingredients, although it does seem that all Madras curry has to be spicy, it must have a red color or intense orange and has sweet aromas from ginger or spices such as anise or cinnamon.
