Black lemons, also known as loomis:
This is a very versatile citrus fruit that can be used in mixed drinks, salads, dairy and in any infusion. It has a bitter and citrusy taste like a lime, but it also has an earthy flavor with a smoky touch and lacks the sweetness of fresh limes.
To obtain a black lemon we start with a normal lemon, which we boil in salted water and then dry it in the sun for several weeks. We usually cut whole segments to add to soups, meat dishes, fish, vegetables… It can also be used ground into a fine powder, if we are looking for a more subtle flavor.
